2 Successful Pickles Made

So far I have only made the blackened sichuan chili peppers (made with Hatch & Annaheims). The peppers I chose ended up being a little deadly but the flavors were very good. Next time I will use milder chili's (the author suggests Fresno's).
I have also just made the Shanghai cabbage which tasting it before it sits, it already tastes pretty good! Extremely easy, but take the authors suggestion about opening a window before burning the dried chilis (oven fan was not adequate)... it will make a slightly toxic cloud of capsaicin in your kitchen. ;-)
